Why didn't Ozymandias just use his speed and reflexes to disarm her like he did the assassin in his building? He was more than capable of doing so.

The removal of most of Rorschach's backstory and Tales of the Black Freighter really hurt the film, Malin Akerman was just awful as the Silk Spectre, and the ending, while making more sense than the original, really screwed up the main theme of the entire graphic novel. In general the acting was pretty meh, the exception being the guy who played the Comedian. It was a pretty good movie, and I'm sure if I saw it without reading the source material, it would have blown me away, but, from the perspective of someone who already read the novel, I can't see the movie as being anything but and inferior version.

There is doubt throughout the story as to whether or not Ozymandias really is the greatest human being there is, was, or ever will be, and so catching the bullet at the end symbolically proves he is. It also fits Ozymandias' character to try and claim this boast for his own.
It may not make sense logistically, but it does make sense poetically. It is also of special importance that it happens as the issue of "peace at what cost" is brought up. Ozymandias is trying to bring about world peace by killing millions of people, and the other Watchmen are trying to save millions of people by killing Ozymandias. It is important that Silk Specter pulls the trigger, because it shows that she is perfectly willing to kill in order to save lives, and is therefore no different than Ozymandias. If he had simply used his speed to disarm her before she got the chance to kill him it would change the nature of the "greater good" argument they have.
