Peanut Sauce:
1 Tsp. masamun curry paste
2 Tbsp. each fish sauce, peanut butter
3 Tbsp. each tamarind juice, sugar
1 Tsp each paprika powder, garlic
2 C. coconut milk.
4 Tbsp crushed peanuts
Combine and bring to a boil. Simmer until reduced to about 1 1/2 Cup of sauce. Goes great with chicken salad or as a dipping sauce.
